Summer Plans

For someone just about to write a post entitled 'summer plans', you'd have thought that I had a lot of exciting things organised this summer. But, the truth is, I have no plans for the entirety of the summer. So, I am writing this to give myself - and hopefully you as well - some ideas of what to do this summer.

Work work work work work
The main thing that I will be doing this summer is working. It's not sipping cocktails in Barbados but it is something. I have a job interview on Tuesday for my local Wetherspoons and I am hoping I'll get the job as having bar experience will be useful when looking for part time jobs in the future.

Cumbria Travels
Other than working, I hope to spend at least a week in Ambleside which is in the Lake District as that is the closest town to the obscure, small village where my husband lives. Yes, I am in a long distance marriage and it is really not fun. I do struggle not being with him but visa regulations are keeping us apart so there's really not much we can do. Unless we march on the Home Office and perform a coup d'├ętat, looks like we won't be living together for a few more months yet.
Alongside the obvious draw of seeing my husband, the Lake District is a gorgeous area - especially in summer. I really want to go on a boat across one of the lakes and explore the mountains and take lots of pictures.

Learn to cook
I always include this in my bucket list style posts but I never get round to it although I really need to. The last time I cooked for my husband he said he would have enjoyed it if he hadn't eaten for three days. Rude, isn't he? But, in all honesty, I couldn't eat it myself.
I want to learn how to make those fresh, delicious salads with homemade dressing and cold meats. As well as things like paella and a range of hot dishes. I can currently only cook macaroni cheese or tarka dal which is clearly a bit limited.

Explore Wales
It is slightly embarrassing that I have lived in Cardiff for almost two years and have not seen much of Wales at all. I really want to go to Barry Island and I'd also love to take a trip to the Valleys. If you know of any good places to visit in Wales, be sure to let me know.

Try local restaurants
I've got to the stage in my life now where I don't care what people think of me if I go to a restaurant alone. My husband lives on the other side of the country, my flatmates are often busy, my family are in Devon - I'm not going to limit myself to only doing things when I have someone doing them with me.
I would really love to try more local Welsh dishes such as cawl and I love the idea of trying independent restaurants as opposed to chain ones as it is something totally different and a good way to support local small businesses.

Eat so much fruit
One thing I was craving all through winter was watermelon and now I am delighted to see it in the supermarkets. So, this summer I want to really make the most of all the fruit.

Live in dresses
I have got into a rut of wearing jeans every single day and I really want to get out of it. I rarely wear dresses but they are so much more comfortable in summer as you don't overheat in them like you do in jeans.

I hope you enjoyed this post and it gave you some ideas of what to do this summer. I certainly can't wait for the long, hot days filled with watermelon, and salads, and sunbathing, and trips to the beach.

  3. Watermelon is one of the tastiest things about summer (well, apart from Magnums- obviously!) and I happen to know of a seriously delicious and super simple watermelon salad recipe that you'll be able to whip up in a flash, culinary skills be damned :)
    I make it without the olives or parsley (I think both are gross) and it's still damn tasty :) xxx
